So wine has to convert from 24 to 16-bit color to allow the game to run. Similar to what I reported for bug #1973 (a screenshot is attached)? Because that application also works perfectly with X set to 16bit, but the graphics are completely broken in 24bit. According to the author of the affected application, it's a bug in StretchDIBits, but it sounds somewhat similar to what you describe.
