Are your physical speakers surround 5.1, or are you expecting it to down-mix to stereo sound? Wine's directsound does not currently support downmixing from 5.1 to stereo. In addition, directsound may not open your audio device in 5.1 even if it is available. I do have some patches to fix both of these issues that I plan to send soon.
