It sounds like there are some MIDI instruments missing or something. Some songs also produce a static sound at certain points. Both the retail version and demo are affected. The quickest way to reproduce this bug is probably to use options -> sound test. A few tracks that sound remarkably different in Wine compared to Windows are the title screen theme (BGM 000) and both version of Flying Battery Zone (BGM 009 and 010).
