You need to retest in plain Wine. The Ubuntu packages include unsupported changes to dsound as well as the winepulse driver.
Thank you for the suggestion. I followed your advice and now I have Wine without the unsupported source code. The bug now has evolved: music is playing but the screen is black. I made some test and the involved library is 'quartz' which appears set to 'native' after the suggested winetricks. I tried to set quartz as the wine version one and the screen is no more black, I can see the main menu but the music is muted again.
