That particular chapter in the game was always a bit problematic in Wine (although there was no crash): the game produced the following messages constantly in the console while loading Chapter 2: err:d3d_surface:IWineD3DBaseSurfaceImpl_CreateDIBSection CreateDIBSection failed! err:gdi:alloc_gdi_handle out of GDI object handles, expect a crash Planescape: Torment also always produced the same messages for me while running. Unfortunately, I can't find a demo for PS:Torment, and the demo of Sanitarium doesn't contain the problematic chapter. Setting DirectDrawRenderer to opengl (in the registry) "workarounds" the crash but there are graphical glitches in both games with ddr=opengl.
