Start "winecfg" in "Applications" tab -> "Applications Settings" click "Add
Application" and navigate to everest.exe (install folder).
Change windows version for that entry to "Windows 98" (listbox below), click
"apply"/"ok" after that.

This configures wine to mimic Win98 behavior for everest.
