Also the problems seems to be somewhat system specific. If the demo starts without problems after installing it to clean wine system you're out of debugging luck.
The demo starts with my system when I shorten the long full-path lines in install.win to under 44 characters. The paths don't need to work.
Demo works fine here. If I try to run nfs3demo.exe from the setup directory, then I get the error you describe.
