I found that this bug is able to be worked around by using taskset. (ie, taskset 01 "wine program.exe" seems to work quite well).
Indeed, disabling one of the cpu cores (or using taskset) improves the situation considerably: during sailing almost all of those hiccups have gone; loading times are also much shorter between scenes.
