./configure
make depend && make
sudo make install
winecfg

I had a binary distribution of 1.0 installed, but removed all known parts of it
(as per /www.kronenberg.org/darwine/):
  - /Applications/Darwine
  - ~/.wine
  - ~/Library/Preferences/org.wine.winehelper.plist
