The error that kills ine install is this one: err:msi:ITERATE_StartService Failed to start service L"Bonjour Service"
but I don't what the cause is.

Can you try with a clean .wine directory?
I've tried that. Firstly, Wine informed me it needs Gecko, installed it, then PS CS3 installation hanged.
