Thanks, that explains one difference: For me, the GOG version launches without
any winetricks. The Steam version requires the xact winetrick to start at all.

I still can't reproduce the crash that you are describing, but I only have
Intel and AMD graphics to test, so maybe Nvidia is the important factor here.
If you don't have time to do a full regression test, could you at least try to
run the game on a computer with non-Nvidia graphics and see what happens?
