Austin, i did a retest under wine-1.3.23 and the demo still starts as 1280x 720 [Windowed], even though i can (without any problem) switch to 1920x1200 [Full screen] in the ingame's menu.
Next time i start the game it runs in full screen without any issue. Do you think, this is a valid bug? It could be, that initial windowed mode is something like "safe start mode".
It works under Windows on the first try, it should on Wine.
