The other two modes - data disc and audio CD mode - don't display any menu bar at first. Maximizing the internal window makes it sort of appear, but it's empty except for the small icon from that window. This seems to work with wine-6.7, but I'm not sure what I'm supposed to see. Could you retest?
Sorry for the delay. It still looks broken to me, as of wine-6.12. When starting the program, choose the top option (create a new data-CD/RW, ...) and an MDI window should pop up. On Windows, a menu bar appears at the top with options such as file, edit, etc. With Wine, it isn't there unless the MDI window is maximized, and then only the MDI window icon (a disc) is visible.
