What graphics cards and drivers are you using?

Anyways the cockpits should be drawn as on Windows. As quick and easy workaround rename the 3dckpit.dat files of the Aeyes cockpits and replace the F-16C40 and F-16MLU ones with the original files from the Res_1600 folder. Anyhow this bug needs further invistigation. I think it might also be just a bug with the cockpits themselves or their installer. As this happens only with custom modded cockpits that are not part of the original software and can be worked around rather easily with the necessary know-how, I changed the importance to 'minor'. If sombody wants to start working on this, I suggest taking a look at the install procedure of the pits and compare the 3dckpit.dat files of a Wine installation with the ones created on a native Windows installation of the cockpits.
