They are based on the Electron framework. All began with commit a085746bbe3594e4ea01ea578823383e6447b6b6 when there was an unresponsive, empty black window and the app was constantly using 100% CPU. In Wine-11.0-rc1 this is evolved to an empty white window (CPU usage is low). Prior to commit a085746bbe the apps were displaying window contents properly. You don't need to have a Itch.io account to reproduce the bug: after installation the login screen is shown but is is unusable due to this bug. The first commit is already bisected in bug 58491 [3], a while back. They are different in that, the Itch app for me becomes white at https://gitlab.winehq.org/wine/wine/-/commit/b5e59c09d4a where, as mentioned, Steam goes black. I tested Steam with AMD (Mesa) and NVIDIA GPUs, and it was working fine in both cases with a clean prefix.
