The default value comes from here http://source.winehq.org/git/wine.git/blob/797c037bff2f7621f5b3d632bd8993495... I would suggest raising that as default. But I have noticed before that even with VideoMemorySize set to 2048 the NVIDIA control panel has shown me a difference of over 500 MiB on the dedicated memory while using the game.
