In Mixcraft 5, under the same version of Wine, when I hit a note on my midi
piano, it registers, but this doesn't happen on Mixcraft 6. Probably a bug in
Mixcraft, but I figure it's possible this is a problem in wine.

MIDI input in Mixcraft 6 works fine for me using Wine 1.4.  Have you tried
selecting only one MIDI input in the preferences instead of the default "All
MIDI Devices"?
