Under Windows, although the drive is mounted, it can also access the TomTom directly (with GPS switched on (possibly Bluetooth also but I've never used it) and communicating with the program via USB). This can not be achieved with file-access only, through a mount.
Yes, it seems that the TomTomHome software accesses the mounted FAT-partition only for updating userdata. Alle other communication goes through a other usb-connection.
TomToms run on Linux, as a result both TomTom Home and the TomTom software source code is available from the website under the GPLv2.
No, the TomTomHome windows software is closed source and while the Linux distribution (golinux) is open, the GUI back-end is not.
