Try these untested macros:

#define STARTLOG(dbch) ((_wine_dbch_##dbch).flags |= (1 << __WINE_DBCL_TRA
CE))
#define STOPLOG(dbch) ((_wine_dbch_##dbch).flags &= ~(1 << __WINE_DBCL_TRA
CE))

And then use them like this:
void aWineFunction(...)
{
  .......
  STARTLOG(relay)
  .......
  .......
  STOPLOG(relay)

  .......
}
