In ubuntu, the standard way to not have pulseaudio is to disable it among the start menu options, and then edit /etc/pulse/client.conf so that "autospawn" is uncommented and changed to "no." Wine uses the default soundcard, so changing the default soundcard should use a little script in the user's file called .asoundrc which should have as its text something that points to whatever soundcard you want to use.
