Could it be the 7800GT is not detected correctly by wine? Is your card detected or does it say fake card too? Because of the framerate of the capture, the flicker is exaggarated - what really happens is that every time you press a key, all your text are flicker for a microsecond, but it's still bloody annoying to type that way. Of course, the problem still exists in the most recent Wine release (0.9.20) To reproduce this bug, install keynote from the given link and launch it. It should open with the default sample note showing (if not, sample.knt is in the same directory as keynote.exe; load it.).
