Uh, wine has no security features at all. Every windows application running with your user privileges can do anything a linux application could do, no matter which folders are assigned drive letters and which are not. So, mounting the home directory is not a security risk at all. If you need security and separation, use a virtual machine, or a linux container or something similar.
On another note: How could/should a patch fixing this problem look like, if it aims at getting accepted? A checkbox in winecfg won't work, because when winecfg is started, wine already created these mimetypes and stuff. So, at the very least enabling that checkbox would have to remove the previously created mimetypes.
