For example compile farm might not have a video card. But it should be no problem in compiling Wine. As long as all the development requirements are meat.

As to your problem while running Wine - have have to use separate compile of Xorg. The one that comes with OS X is unusable. Also see here http://wiki.winehq.org/MacOSX
