You should probably ask at some Ubuntu formus and keep bugzilla just about
discusing wine bugs. Look for aptitude's file: preference and setting
Pin-Priority, Apt-Pinning etc. Alternative (bad?) way would be aptitude hold
feature.

As i said - ask some guru at Ubuntu... I'm not guru ;)
