I mean the verbose output of aplay which tell you the buffer size and period
size if the default parameter used by aplay can give you a reasonable qualitiy
of the recording

AFAIK, aplay don't like one period per buffer

you can know the parameter used by wine when the game is recording

cat /proc/asound/card0/pcm0C/sub0/hw_params
