Marc-Olivier is right, this looks like a new issue in 1.1.25, and according to my backtrace and other crashes I experienced, these crashes might originate from some changes made in WineD3D since 1.1.24. After downgrading to 1.1.24, EVE runs rock stable again.
If I have some free time, I'll try to look deeper into the issue, using a Wine with debugging symbols to get a clue where the crash actually happens in the code.
I would also like to add that EVE requires some of the original d3dx_##.dll files to run properly. There might be an incompatibility between those DLLs and the latest changes made to Wine.
