I have a Wine Installation of steam on Host A and a Linux installation of Steam on Host B. The hosts are able to connect and stream a game from Host A to Host B, but no sound information is sent.
I have tried streaming from a Linux installation on Host A to a Linux installation on Host B and sound information is sent.

I maybe should add, that I tried to stream "Lego Star Wars The Force Awakens" (Steam Version) from a Linux Host (Debian Testing) to a Windows Client (Win 10).
Video and Controls work, but Audio doesn't.
I have an Nvidia Graphic Card (Official Driver) and Pulseaudio on Host, Intel Graphics on Client. Hardware Encoding is activated in the Steam In-Home-Streaming Options. Wine is Staging v.2.11 and uses Windows Vista + CSMT activated.

For those who want to try a possible workaround: Try to stream the audio via pulseaudio: https://wiki.archlinux.org/index.php/PulseAudio/Examples#PulseAudio_over_net...
You have to install "pulseaudio" on both the client and the server. Then you can use the Client as the pulseaudio-Server and the Host connects to it.
For Windows Clients: It is possible to install "pulseaudio" inside Cygwin http://cygwin.com/. Cygwin lets you run specific linux applications under windows.
Sadly my network is too slow, so there was choppy sound when i used steam streaming at the same time (even though it ran smootly when running alone).
You should maybe have a direct network connection with 100 mbit/sec or at least more than 10 mbit/sec.

It worked (at least for me) with Wine Staging Version 2.11. Maybe you could give us some more details?
