wine --version wine-1.3.5
I opened the iTunes installation file with Archive Manager, then installed the various files separately. Installing each of the application dependencies first and then run the overall to get the application working.
The problem I see now - app store doesn't work and the application will freeze during normal use. I do get an error on load about Bonjour service not starting but otherwise ok.
I tried to authorize computer but it failed - can see it in the debug.
Application froze when I clicked on the store.

One problem was resolved by modifying /etc/security/limits.conf. The bug report I used is below. Distnoted.exe no longer crashes but I'm still experiencing the freeze behavior.

This looks a lot like bug 12659. Does winetricks dcom98 help?

DCOM98 didn't help earlier but I can revisit now that I've cleaned up things. I've posted new logs and the current test procedure. I'm not sure if it's just my install but earlier when I did install, I had a bunch of new errors pop up.

Was going along good until I tried to fix msvcp60.dll (post registry and oleacc.dll). I did notice I couldn't register the dll like I could the others.
70. Test ran OK - need to resolve another DLL [import_dll Library MSVCP60.dll (which is needed by L"C:\windows\system32\OLEACC.dll") not found]. 71. http://www.dll-files.com/msvcp60.zip?0VKjWGdJgW #msvcp60.dll 72. unzip msvcp60.zip 73. "mv /home/brian/iTunes/MSVCP60.dll /home/brian/.wine/drive_c/windows/system.32/" #move msvcp60.dll to /windows/system32 74. test #7 "WINEDEBUG=+ALL wine iTunes.exe" #test changes 75. No longer launches - looks like msvcp60.dll manual mods blew it up.
