While playing Dragon Age Origins, I often have crashes with a framebuffer error :

With what debug options should I create a debug output log for this specific error ?

Did you use any funny options when building wine? What version of gcc?

No funny options were used to build wine.
I didn't check with recent version if that game still happened...

You have very similar bug report here (same game even) and none other is replying having the same issue. It's also reported using old wine. It doesn't make much sense to keep these open if you don't test them against newer wine.

And there are no other users responding here...sounds abandon to me. If you want to keep this bug open you really should test the game with 1.8 or 1.9 series.
