Don't use 'wineinstall script', do './configure && make install' instead.

Does this help?

Which '!' is it not finding. Try adding 'set -x' to the top of the script and
re-run it.

Friendly reminder of 2.5 years without posts. In git the brackets are still
missing in winetools so I guess the problem is still present.
