GOG.com version of the game Wine 1.5.28 Nvidia hardware Arch Linux x64 d3dx9_36 override to get around http://bugs.winehq.org/show_bug.cgi?id=31701
There is sound during gameplay, but none in the cinematics. Sound should be expected at all times.
The log does not show anything related to sound. There is a loop of these two lines.

d3dx9_36 is also required (http://bugs.winehq.org/show_bug.cgi?id=31701). That's all you should need.

There has been so much audio related improvements meanwhile that you should really try with more recent wine. We currently using 1.7.53

Just restarted the game a few times, and got it to work that way... Setting the "-forcestereo" parameter launch parameter for the game might have helped, but maybe that's just my imagination. I only tried it like 20 times. Not sure if it's a wine or a game issue, to be honest.

Thank you, also works for me. Sound was crackling and noisy at first runs, but It's all ok after I started the game with 80% of system sound level (also may be no correlation)

Oddly enough, if you force installation of d3dx9_36 then launch the game, sound in cinematics will be present but there will be no sound in the main menu instead. On subsequent launches the old behaviour returns.
