I'm using Gnome Shell so I'm pretty sure that OpenGL is NOT using software rendering (wouldn't work). How does wine detect this?

Is there ANY documentation what winediag does? It would be much easier if one could access it independently of wine so we could have a look at all the libs it tries to load. Currently it seems pretty much like TRY AND ERROR.

winediag is one of wine's debug channels (http://wiki.winehq.org/DebugChannels). You're likely missing 32-bit compatibility libraries for your graphics drivers, see http://wiki.winehq.org/3DDriverIssues.
