I was having a lots of trouble with crappy sound in steam games that i was solving by using the prefix PULSE_LATENCY_MSEC=30
But then a game didnt work that way and found that changing the /Windows/System32/dsound.dll for a dsound.dll from a Windows 7 32 bits solved all the sound problem's related of my wine installation.
Running ArchLinux x64 up to date I only had installed dxfullsetup with winetricks Mobo: msi P67A-GD65 No dedicated sound card, using the builtin with the mobo Pulseadio installed

What game was having the problem? Can you attach a log with the channels from http://wiki.winehq.org/Sound with NO copied dsound.dll and NO pulse environment variables set?
i was having the issue with all games but since i updated too 1.8rc i dont have the sound problem

from playonlinux, but the versions of the arch repositories (1.7.53) didnt work neither
