If by that you mean setting OffScreeenRenderingMode as specified at http://wiki.winehq.org/UsefulRegistryKeys , changing settings makes no difference.

First - install Mono (instead .NET) via winetricks, then try run "Videosetup.exe" in Sabouteur directory. And then run "Saboteur.exe".
After installing mono2010 and running wine VideoSetup.exe I get

You're right, mono2008 does allow me to configure the video settings. However starting up the game still fails.

Try download standalone files through winetricks, you can look at my settings of D3D in win. register in appdb test results - blue-ray disc version of Saboteur (little mistake from me, I have DVD version) .
I have GT440, that's similar card as yours I think, and if I set all efects to low, the game is playable, but I have problem with keyboard - it seems it´s pushed the key "down arrow" all the time, mice seems to be ok. Sound is crappy or no sound, but I think it´s pulseaudio issue - sound is faster and distorted from ver. 1.4 of wine in all games I have....I´m waiting for wine 1.5 but if the sound issue will be still the same, I will try wine 1.3.28.

Actually the game box lists geforce 7800 gtx as a minimum requirement, so that may very well be the case. It fails to start even with minimum detail.
