I don't think there is a demo available. You can buy only on their site or in Steam.

If I redirect it to a file, it's 1 GB before steam even finishes loading, and if I set it and try to launch it from the game folder, it just prints a few lines and exits, and the game seems to launch from within steam anyway.

please retest with recent Wine version, preferably Wine 1.7.54 Also correcting summary. OP talks about the GOG.com version of the game, not Steam.
Unless someone can prove that GOG.com and Steam have the same exact version/packaging, keeping it separate.
