You can do the same using the task manager (taskmgr) and selecting your
application in the *Processes* list. Right clicking on the *process*, and
selecting the *'Edit Debug Channels'* option in the popup menu, will let you
select the modifications you want on the debug channels.

The developer's guide is now on the wiki, and the section you cite, 
https://wiki.winehq.org/Wine_Developer%27s_Guide/Debug_Logging#Controlling_t...,
has no asterisks.

The SGML files are not going to be updated. Note that
https://www.winehq.org/docs/winedev-guide/dbg-control also doesn't have
asterisks where you claim they are, and even if it did, those instructions are
for selecting items from a list, not commands to be typed, so there would be no
need to add a note warning readers that the asterisks were not to be typed.

After rereading this, I realized I had misunderstood what you were reporting.
You are correct about the wording needed for current Wine, and I've corrected

FYI, 1.6.2 is obsolete; the current development release is 1.9.20. You should
upgrade before reporting any further bugs.
