I killed the program as fast as I could after it started (black screen, it wont go there when the bug appears) so I kept the logs as small as possible.
If you need the full logs where I also click exit in the game menu, just ask.

The demo works fine for me, installing and
cd .wine/drive_c/Program\ Files/Electronic\ Arts/Need\ For\ Speed\ III\ Demo/ wine nfs3demo.exe
As far as I can tell, you are not meant to run the game from the cdrom (install/setup directory) by starting the nfs3.exe/nfs3demo.exe. It's only there to be copied by the installer.
I can't reproduce this problem, the initial problem reported in this bug report shows the user running the program incorrectly, eg, not changing directory first.
I should have the retail version in a few days, which I'll test then too.
