Compiled newest dev wine from source (1.3.1), performed iTunes install with defaults accepted except:
+ Unclicked "Use iTunes as the default player for audio files" + Unclicked "Automatically update iTunes and other Apple software" +"AutoRun is turned off. iTunes won't be able to recognize when a CD is inserted or ejected until your computer's AutoRun setting is turned on. Do you want iTunes to turn on AutoRun for you?" No
Upon seemingly successful install, ran for first time:
+ Unclicked "Add MP3 and AAC files" + Choose "Yes, keep my iTunes Media Folder organized" + Dialog box noting, "Warning! iTunes was not properly installed. If you wish to import or burn CDs, you need to reinstall iTunes."
The second the iTunes GUI popped up, I got a dialog box noting how "The program iTunes.exe has encountered a serious problem and needs to close. We are sorry for the inconvenience. This can be caused by a program..."

Sounds related to gecko.
I'm on Ubuntu 10.04 with wine1.3 (v1.3.2) + wine1.3-gecko from ubuntu-wine/ppa and it doesn't crash.
Whatever your distro, you can manually download the latest wine_gecko. Please read http://wiki.winehq.org/Gecko.
Don't forget AppDB where you can find what works, what does not, is there a workaround... (http://appdb.winehq.org/objectManager.php?sClass=application&iId=1347)
NB: There is a console bug introduced recently; just type "reset" and enter to solve it.

Sounds related to gecko.
It isn't. webkit is part of iTunes and safari, gecko is unrelated.

Native secur32 from winetricks prevents the crash, it then seems to hit bug 23609 (or similar) and just hangs there).
