The problem is that currently Gnome doesn't support this standard. You are probably using Gnome and that's why you don't see them. If you have KDE you could try to use it to restore files. I've started implementing a Trash virtual folder for wine so that the user can manage it even if the desktop environment doesn't support it but currently the folder doesn't support file restoring and there is no application in wine that could be used to view it.
