[Bug 638] Document Wine debugging channels

Regular Joe user shouldn't need to know the debugging channels as a part of his regular user experience. If he runs into a problem, we can ask him to turn on a particular set of debug channels, or he can read through the generic debug channel documentation ("WINEDEUB=+nameofchannel") if he's astute enough. My major concern with this issue is that it doesn't scale at all.
