This works on kde, I don't know other window managers/desktops.
Press alt+f2 and type wineserver -k or you can start another sessions ctrl+alt+f1 and type same message. That should kill wine process.
Or you can have console open and type there xrandr -s 1920x1080. Assuming your resolution is that. -r Sets refresh rate.
