Interesting - from CJK I've got only Japanese set up (via "HKEY_LOCAL_MACHINE\Software\Microsoft\Windows NT\CurrentVersion\FontSubstitutes") and while my results for English and Japanese match yours, results for Korean and Chinese are the same as for English - so they match neither XP nor your wine setup.
Not only FontSubstitues but also Font Association settings needed. If you have a test machine, please change Control Panel=>Regional/Language Option as described in comment #50. This option changes system ANSI code page value, too. So you'd not change the settings if you use the PC for work. Because some programs may not work correctly.
I'm also interested in your settings.
I ran those Windows XP as VMs. I set up the registry keys by control panel. Actual registry keys are mentioned above.
