As a workaround, you could create the path yourself with sthg like
mkdir -p /path/to/wineprefix/drive_c/Program\ Files/Common\ Files/Microsoft\ Shared/TEXTCONV
before running the installer, although I'm not sure it would work if Microsoft Office isn't installed first
