Of course.

Though it seems that we may need both -fno-omit-frame-pointer and
-fno-asynchronous-unwind-tables.

FWIW, I compiled wine with a newish gcc (4.6.0 20100812 experimental), and
tried winetest. All tests that normally pass for me still pass.
