Ok, I found what was going on. Maarten's patches should not have been applied
(reading comments I assumed they were the ones supposed to fix wine), only a
patch from Tomas
(http://www.winehq.org/pipermail/wine-patches/2008-February/050561.html, which
is the one applied in Fedora), plus a patch from comment #9 (which fixes
"ALSA_CheckSetVolume Could not find 'PCM Playback Volume' element").

So the mistery solved. Just don't apply Maarten's patch.
