I've noticed that if I execute steam while playing a movie clip with totem or playing a music clip in audacious, then the sound works perfectly in steam.
If I run steam on its own, (i.e. with no active audio applications at the time) audio crashes until the next reboot.
the other thing I'd done before this worked was attempted to install pulseaudio and related packages on synaptic, but quickly regretted it and re-installed esound (esd). I doubt this had anything to do with it though - I hadn't tried running it with an audio application open before I fiddled with synaptic, but I'm assuming it would have worked back then too.
