Just compile Wine in the conventional way and don't even install it.
Just run it directly from the build dir with the full path:
/path/to/source/dir/wine setup.exe &> /tmp/file.log

And I'm talking about these lines:
  2 0x7ee7cdbf WINPROC_wrapper+0x79b() in user32 (0x0034ddf8)
  3 0x7ee8303e CallWindowProcW+0x66() in user32 (0x0034de38)

They should show function parameter names, values and line lumbers.
