open regedit
navigate to HKEY_CURRENT_USER->Software->Wine->Direct3D->Useglsl
set it to "disabled"

This pic is not uploaded by me, but it shows what needs to be changed. Works at
least ati 7870, closed source driver. I know because I have done it I had also
texture/shadow issues.
