The problem happens with every version of Thunderbird from 1.0 to the current 8.0, as well as Firefox. It happens with every version of Wine I tried from 0.9 to the present. I did not test versions of Wine older than 0.9.
The problem does not occur if I run Firefox or Thunderbird without a window manager:
/etc/init.d/gdm stop xinit wine thunderbird.exe
If I change my window manager to Metacity ("metacity --replace &") then instead of leaving gray areas on the screen, a slightly different but related bug occurs. First position Firefox (or Thunderbird) over another window and click a few menus. Then move Firefox off the second window, let go, and start clicking the menus. Rectangular holes corresponding to the menus clicked when Firefox was covering the window will be cut in the window that it used to cover, allowing the desktop background to show through.
With Metacity, enabling composting effects via "gconf-editor /apps/metacity/general" makes the problem go away.
