I can not see most of the text in Ares 2.1.7 blackness obscures most of the
text when running the program

I attached a screenshot. On the left menu, all that is visible is a search box
and bullet points.

I can't reproduce this problem, tested with Wine 1.2.3/1.3.10 and 1.5.22 on
Fedora 17, XFCE 4.10.
Do you still have the reported problem with 1.5.22 or newer?
